Stale Bread İçli Köfte

Chef Ali DOĞAN

½ stale bread

40 g of potato

1 egg

Salt, pepper

½ glass of milk

For the Filling Mix

60 g sea bass or sea bream

2 tablespoons of oil

20 g onion

2 cloves of garlic

1 tablespoons of oil

2 branches of fresh basil

Salt and pepper.

Stale bread is softened with milk and added boiled potato, egg and spices and mixed until it becomes dough. Filling mix can be made of minced meat, chicken or fish (we preferred fish). Cut Sea Bream into fillets, get rid of bones and skin before cutting it into cubes. Sautee the meat with onion and garlic in order in a saucepan and add spices. The mix, after it cools down, is put in the stale-bread mix and meatballs are rolled. Boil or fry in oil to serve. Bon Appetit…
