The Scope of the Research



In the research where waste was taken in a large scope; along with the dimensions of the waste of bread and the factors affecting it, the quantity of bread consumed, the form of waste, the place it occurs and the reasons why it occurs and the perspective of the people to bread, their preferences and their attitudes and behavior regarding bread consumption have been put forward. Within this context the places where bread is produced and consumed have been included in their research.
In the “Research on the Waste of Bread in Turkey” 252 bakeries, 53 personnel in cafeterias 53 students in cafeteria, 611 authorities from restaurants and hotels and 552 people eating food in the cafeteria of their foundation have been interviewed throughout the country. Also information was collected from 5662 family members living in 1589 houses on where they eat their meals and the consumption of bread.
The attitudes and opinions of all the public sector have been included in the research and all aspects of the matter were studied.
The results obtained does not only put forward the data regarding the production and consumption of bread, waste amount and waste forms but it also sheds light on the attitude, behavior and opinions of different sectors of the society.
